Subject:         nitrosamine exposure

I'm working to increase my levels of nitric oxide by eating
large amounts of leafy green vegetables. In fact, I'm taking
6 fist sized servings of cooked kale per day.

However, one of the things I repeatedly come across is
concern about consuming nitrates because it is converted to
nitrites...exactly what I'm trying to do...which leads to the
production of nitrosamines and an increased risk of cancer.

The articles discussing this seem oblivious of the value of
nitric oxide production, and the articles discussing
increasing nitrates for nitric oxide production don't mention
cancer risk.

Is there a dietary strategy to maximize benefit and minimize
risk?
