It's true that miso is high in sodium, but it's usually used sparingly. I sometimes make a bowl of miso soup, but that just takes a teaspoon of miso (along with veggies and lots of sea vegetables (hijiki, kombu, wakame and more). I do use small amounts of miso in some recipes, but I still try to follow the rule of thumb of not more than 100 mg of sodium for each 100 grams of a serving.
