You might check out Daiya cheese. It tastes really really good but I don't know what the fat content is, it is vegan.

Also, I really like some of Jo's uncheese recipes, and Bryanna has a great cheese recipe that you can make to go on nachos and that sort of thing, now that I use Daiya I don't use it as much but it was very good and I think it had like one tablespoon of oil per 2 cups of cheese. You might even be able to delete the oil completely, not sure. It's called Melty Pizza cheese and it's in her 20 minutes to Dinner, I think, cookbook. You can ask her about it on New Veggies.

The other really good recipe is Jo's Crock Cheeze, it is soooo good, it's made from tofu so I'm thinking if you used low fat tofu it might fit into your guidelines, it really satisfies a cheese craving.

I have noted that as the years pass (12 years vegan) cheese becomes something you don't crave as much, so that's of some comfort as well! At least I have noticed that for myself.
