In addition to the great reccomendations Ricardo has made, I would offer some of my own. When you get on board, sometime during the cruise you should try to speak to the chef. Trust me, they are use to people with special dietary needs and how to fashion meals for them. You might suggest techniques to use (ie vegetable broth, water sauté etc) for meal perperation. You might even bring on board VegSource graulated veg broth powder,(low sodium) for them to use. Also, you could come armed with a stack of easy and your favorite receipes that you might suggest he can improvise from. In addition, make sure they have beans and lentils in there cupbard as well. If they aren't carrying any, you could bring several bags of dried beans and lentils which they could cook.

I am sure they will have vegtables and fruit. Couple this to the beans and you won't even miss your home cooking. In my experience Chefs like to be engaged this way with special requests. They are eager to learn and to accomodate.

Finally as a snack, make some air popped popcorn and top with nutritional yeast (which you should bring). If they don't have an air popper, you could either find a microwave and plain paperbag or take a small popcorn microwave bowl attachment for use in the microwave.
