Agreed that tofu is a wonderful product -- I use probably one to two pounds per week in various ways.

Although using commercial meat subs works while transitioning, it's probably not the healthiest thing to do long-term, eating soy in it's less processed form (tofu, soymilk, tempeh and miso, edamame) is healthier than consuming a lot of soy protein isolate. I probably use a product with the isolate once a week at most.

I feel the best when I eat lots of veggies and fruit, 50% or more, beans such as kidney, cannelini, black beans, lentils, and soy a small percentage, whole grains, and cut way down or eliminate sugar. I never eat white sugar, only use the raw sugar or sucanat, but even that I use very sparingly. I have found myself to be very centered on a more natural diet.

As far as information, there's lot of that, get some good books such as Diet for a New World by John Robbins, books by Jo Stepaniak on becoming vegetarian, cookbooks by Bryanna grogan, get some good cookbooks such as Vegan Planet and try different recipes. Also subscribing to a magazine such as Veggie Life is fun, something to look forward to and some great recipes.

Dairy is easy to substitute, soy, rice and/or almond milk can sub one for one, I used unsweetened soy for sauces and savory dishes, plain soy (silk) for drinking and cereal, baking, and use Almond Breeze almond milk also for drinking, cereals and baking. Cheese I use homemade melty cheese sauces with nutritional yeast or crock cheese (vegan vittles by Jo S.). There are many good alternatives.

Health wise a vegan diet with natural unprocessed foods (veggies, fruits, whole grains, legumes) is best, will get your cholesterol level to a safe level, your blood pressure, you'll feel great and look younger longer. Drink lots of water and get the junk food out of your diet, on such a diet you shouldn't even crave junk food anymore.
