Subject: Help! New vegetarian

Please help. My family and I had pretty much gone all organic in the last few years, especially the meats and dairy. We also steer clear of overly processed foods. Anyway, I have now chosen to become vegan - there is definitely no going back now. Although I'm not quite ready to give up eggs & cheese yet, (the ones that state that they do not contain animal rennet and ONLY organic farmed) Unless someone can tell me some good and tasty soy brand cheeses to try.

I guess what I really need is some support as far as advice on cook books (nothing elaborate). Something to give me simple ideas for balanced meals that aren't too time consuming. The hardest part for me is re-training my brain to cook balanced meals without the meat and dairy protein.

I am pleased to say that my meditation has become even clearer and I find it much easier to stay peaceful. I have been on a vegetarian diet since October and I feel great, but I know as with everything else, there must be balance so any advice is much welcomed.
