I don't really know what to say about the shellfish thing, as I never much liked that stuff and didn't have to deal with craving it. Maybe you could find a couple of recipes that use nori (seaweed)? You can get a nice, oddly fishy flavor that way. Also, you might consider doing some reading about the mercury and PCB levels in shellfish; that'll turn you off fast.

Um, about the "surprise" non-vegan things--there are too many! I guess the ones that plague me are:
*gelatin--in everything! Look out for this in desserts, candies, salad dressings, soups, photo film.
*soap--beware of tallow.
*nuts--I have no idea why, but some company (Planter's? not sure--you could call the company) uses beef fat as a "natural flavoring." Ick.
*breakfast cereal--most have whey, non-fat dry milk, or honey (or all of the above!) Read the labels carefully.
*Soymilk--8th Continent is not vegan!
*Guacamole--many restaurants add dairy.
*Wine--many vintners clarify with egg products, isinglass, etc. Ask questions!
*Tortillas--look for brands that don't use lard.

Oh, man, I could go on like this all day!
