Well, I'm a newbie myself (only about 3 mos.) and am a big time animal lover so my reasons for switching were purely ethical, though I've always felt the vegetarian diet was very healthy. I'm still having the same problem as you are (gas) and so far, it's not getting better, but I'm sure I'm probably not drinking enough water. I can say that I instantly felt better--more energy, getting more rest from my sleep, positive mood (and I suffer from chronic depression), and the most interesting thing is that almost immediately I lost my craving and interest in sugar. I was totally addicted before, having to eat 2-3 sweet items every day I felt. It has amazed me how I have zero sugar cravings now and I don't even 2nd glance the sweet glop at the store.
As far as defending yourself, you don't really have to--when these others are eating rice diets, grapefruit diets, and that horrific Atkins diet that I cannot believe allows people to live more than a week after starting it. If you really want to shut people up though, you can always offer them some images of downer cows or other horrific slaughterhouse events and I would imagine it would either put them on the defensive or at least to back off. Good luck and hang in there.
