Chocolate Tofu Holiday Pie

1 vegan pre-made pie crust (Keebler works well)
1 package firm Mori-Nu or other silken tofu
1 cup semisweet chocolate chips
1/2 cup soymilk

1/2 tsp vanilla extract

Preparation Instructions:

Chop the tofu into small chunks.
Melt the chocolate chips with the soymilk in a saucepan or microwave.
Blend these two ingredients with a hand mixer or in a food processor.
Pour into the pie crust and smooth the top.
Chill for 1 hour or more before serving.

Makes 8 servings.

Preparation time: about 5 minutes.
