As part of its continuing efforts to emphasize the importance of healthy eating for Americans, the Dole Nutrition Institute, a division of Dole Food Company, Inc., in conjunction with the Meatless Monday campaign, are sponsoring a nationwide recipe contest that will run through November 1, 2004. The grand prize will be a trip for two to Hawaii, and selected runners up will be awarded cash prizes.

“Meatless” recipes, low in saturated fat, along with Dole® fruits and/or vegetables will be accepted in three categories:
