Squeeze of lemon juice
1 tsp tahini
1 tsp stone-ground mustard
Salt to taste
Portabello mushroom, stem removed
Bagel-sized flat chunk of red bell pepper
Thick slice of sweet onion
3 lengthwise slices of 1/2 zucchini
Pickapeppa sauce (spicy Worcestershire)
Heat George Foreman
Put in pepper slice to start cooking.
Scoop out avocado into small bowl and add lemon juice.
Put onion slice on grill.
Mix tahini and mustard with avocado.
Put mushroom and zucchini in grill.
Put halved bagel on top of grill, cut side down, to warm.
Remove pepper when tender. Let cool slightly and peel off skin.
Remove bagel and spread with avocado mixture. Sprinkle with salt.
Place pepper and onion on bottom of bagel.
Spread a little Pickapeppa sauce on onion.
Add mushroom and spread more Pickapeppa on it.
Top with zucchini, tomato, pickles, and lettuce. Close with top half.
Try to eat without making a total mess. (Might wanna wear a bib or
old shirt. LOL)
