Subject: Rediscovering Jo's "Vegan Deli"

Hi all,

Summer has arrived here in northern New Mexico, and I was searching through my collection of vegan cookbooks for a new take on warm-weather recipes. Lo and behold, "Vegan Deli" fell out of the bookcase, and Jo's recipes are just the ticket!

I have had this book for years but had only tried a few recipes. Last weekend I went on mini cooking frenzy! I love Jo's "alternative" hummus recipes using white, red or black beans. The Chickenless Chicken Salad and Tabooli are also excellent. I am determined to try every recipe in this book!

Jo, many thanks for pulling me out of my summer "cooking doldrums."
