From what I have been able to establish most of the E. Coli problems
have stemmed (no pun intended) from contaminated seed which
you have no control over although outbreaks in Australia in the last
couple of years have been from the water used.

Whenever I have tried to grow alfalfa sprouts they always seem a
little bit soggy and thinner than the store bought ones so I've been
extremely reticent to eat them. I presume the sprouter you own is the
Easy Sprout. Have you tried growing alfalfa in that? I do remember
you saying you don't want to use your automatic sprouter because
of the plastic/s but it would be an interesting experiment to grow
alfalfa the 3 ways.

Being unsure about bacteria has always prevented me attempting to
ferment foods like sauerkraut or kim-chi/kim-chee although I have
successfully made beer in the past.

Although Dr. Greger does generally recommend sprouting especially
broccoli he doesn't recommend alfalfa which is unfortunate as that
is the most enjoyable one in salads. Also Dr. Greger has an open
invitation as to how one would incorporate broccoli sprouts into the
diet as they are quite pungent.
