Ann Wigmore made rejuvelac with no added probiotic. Brian Clement said sometimes you will grow a bad strain if there is foul bacteria in the air. Some some batches are good and others are bad. Using a professional probiotic controls the bacteria you are growing. Sproutarian gave us a formula to make the rejuvelac without an added probiotic.
I am not saying a person SHOULD eat this way. But some people are really attached to being all raw and this is a solution for SOME people.

Regarding protein powders...it is just deoiled seed powder. That is still pretty natural in my opinion. It is not living or sprouted but it is still a food.

Anyway, Paul, there is an advantage to some of these protein powders minus the fat. hemp protein concentrates iron and brazil nut protein concentrates selenium

Regarding enzymes...my best Chinese teachers just use herbs not enzymes. I am not sure about that because herbs fix digestion just fine, but Brian Clement takes enzymes for anti-aging. For now, they suit me and the people I help just fine. Also, they don't have to be crazy expensive. I do carry Lou's line but I also carry another line that is just $20 for 90 tablets and it lasts a month easily. But enzymes have contraindications whereas digestive herbs do not.
