Because unless we are infants being raised by someone who is 811RV, we have any or all of the following:

--preconceived notions about food and nutrition (these are taught by families and schools)
--cultural and social expectations around food
--psychological needs that we tie to our food

As individuals, we make the choice to confront our notions, expectations, and needs, or not. As with everything else, humans resist change!
