If I was going to participate in that event, I would not want to eat
beforehand. I would want my last meal to be at least 4 hours before
the event started, from my own experience. Some folks might find 3
hours to be sufficient, and some folks might need 6. But for what is
referred to as a "sprint" triathlon, you want to be empty, or you will
get an upset stomach. That's never good. Watermelon would make a
great breakfast before, and bananas a wonderful meal afterward, yes.
