Laura - it sounds like they were not ripe enough. I just went thru 50 kgs of hachiya persimmons & only had a few astringent mouthfuls when i ate a fruit that was underripe ONLY. Otherwise, they were like nectar (sorry: just describing not trying to rub it in!). Of course, these hachiya persimmons were picked locally right off the trees. In the past, I've experienced similar to what you describe when i've had persimmons that were shipped into wherever i purchased them & they subsequently did not ripen well. I've personally learned the 'hard' way that persimmons require a lot more patience to ripen than other fruits too. It can take weeks, literally!
