Does anybody know what the current verdict is on casein in non -fat yogurt. I know yogurt contains casein, since it's a dairy product; however, I'm certain that there was a previous post that talked about the fact that casein structure is altered when yogurt is made, and this alteration makes the casein non-damaging to the arterial walls and "legal" for our diet. Anyway, I can't locate that post anymore, and I am curious if anybody knows. I've done a bit of Googling but haven't been able to find much yet. I did locate some info on goat's milk yogurt and soy yogurt but not regular yogurt. I'm still looking. Mahalo for anybody that has any info.
