You can make frittatas, omelets, benedict, all using tofu. Ask Bryanna Grogan or go on her website, or buy her books, the frittata recipe which is excellent is in the Soyfoods for a Positive Menopause and the Nonna's Italian Kitchen book. The benedict, I'm not sure is n the cookbooks but she will give it to you, it rocks. I use scrambled tofu for the "egg" and the sauce is so good.

You can also make excellent pancakes and waffles, again, Bryanna to the rescue, she has a waffle recipe that is really good, uses garbanzo beans as a base but you'd NEVER guess there are beans in the waffles. They come out light, full of fiber and protein, very easy to make.

I use pancake recipes I got from the Veggie Life magazine before they quit doing the hardcopies, if you like I can email them to you. My favorites are the flaxseed pancakes, and the pumpkin pancakes and I also make banana pancakes from Isa Moskowitz's cookbook Post Punk Kitchen.

You can also make scrambled tofu and don't use the packaged mix you can buy, make it yourself. Here's how to make really good scrambled tofu:

Smash and mash an amount of tofu in a frying pan (I use panspray to keep the fat content down) and saute for a few minutes, add 1/4 t. or so of garlic powder, 1/2 t. of onion powder or granules, a small amount of turmeric, like 1/4 t., and 1 t. or so nutritional yeast. At the end of cooking (a few minutes until as dry as you like it) splash in a small amount of Tamari soy sauce or liquid Bragg aminos. I like the aminos, gives a nice flavor.

You can also saute right along with the tofu some veggies, use zucchini, onions, broccoli, peppers, or anything else you like. This is good topped with salsa.

You can also make homefried potatoes, just nuke a potato, (I like sweet potatoes for a different flavor and excellent nutrition), chop up and add all your veggies, saute and fry until as dry as you like it. You can put salsa on top, or ketchup.

You can also make hash browns in the waffle iron, Bryanna has a recipe for that.

I also have an excellent biscuits & gravy recipe I'll email you if you like.

For weekdays, a good breakfast is a piece of fruit, or a fruit salad, along with a piece of toast or a muffin. You can also make a smoothie, I usually just put almond or soy milk, frozen bananas and blueberries, and blend until smooth.

You can also buy good soy yogurt, I like the
White Wave plain, but it comes flavored too, you can eat it plain or with some granola.

Gardenburger makes excellent breakfast sausage, it's my favorite, or try some of the other subs available, Lightlife makes good veggie "bacon," Gimme Lean is a good sausage sub.

If you want me to email those recipes I can, I have them in word documents because people ask me all the time for recipes and I got tired of typing them over and over so it's easy to do. Just let me know.
