- 1 15 oz can whole beets
- three scallions, thinly sliced, white and green parts
- 3 T finely chopped flat leaf parsley
- 1 large clove garlic, pressed
- 1 t. harissa (if unavailable, use 1 t. ground chile paste
and ⅛
t. each ground caraway and coriander)
- 1 T red wine vinegar
- salt and pepper to taste
Combine
ingredients in serving bowl. Serve chilled or at room
temperature.
