Tunisian Beet Salad





  • 1 15 oz can whole beets
  • three scallions, thinly sliced, white and green parts
  • 3 T finely chopped flat leaf parsley
  • 1 large clove garlic, pressed
  • 1 t. harissa (if unavailable, use 1 t. ground chile paste and ⅛  t. each ground caraway and coriander)
  • 1 T red wine vinegar
  • salt and pepper to taste

Combine ingredients in serving bowl.  Serve chilled or at room temperature.
