Tofu Sour Cream






  • 1 10.5 oz package Mori-nu lite silken tofu
  • 2 t. umeboshi plum vinegar*
  • ½ t. salt
  • 1 t. sugar
  • ¼ t. citric acid crystals (“sour salt”) or powdered vitamin C (ascorbic acid)

Combine all ingredients and process in a blender until very smooth and creamy.

*inexpensive; available at natural foods stores.  Eden is a good brand. I find that umeboshi plum vinegar gives the finished product a more authentic sour cream flavor, but lemon juice makes an adequate substitute.
