Saffron Rice





  • 1 c. basmati rice
  • 1 ½ c. vegetable stock (preferably chicken-style)
  • 2 T minced onion
  • 1 small pinch saffron, crumbled
  • ¼ t. turmeric
  • ½ c. frozen peas (optional)

Combine all ingredients in a pot and simmer, covered, until rice is done, about 20 minutes.  It also cooks perfectly in a rice cooker.
