Saffron Rice
1 c. basmati rice
1 ½ c. vegetable stock (preferably chicken-style)
2 T minced onion
1 small pinch saffron, crumbled
¼ t. turmeric
½ c. frozen peas (optional)
Combine all ingredients in a pot and simmer, covered, until rice is done, about 20 minutes. It also cooks perfectly in a rice cooker.
