Fluffy Fantastic Pancakes




There are many ways to make pancakes without eggs, milk, or oil.  I’ve tried recipes with pureed bananas, recipes with blended tofu, recipes with soy yogurt, recipes with egg replacer, and even a recipe with mashed potatoes!  But these are my all-time favorite pancakes – they are light, fluffy and delicious without using any fancy ingredients at all.

  • 1 ¾ c. unbleached flour
  • 1 c. whole wheat pastry flour
  • 4 t. baking powder
  • 2 t. baking soda
  • 2 t. salt
  • 2 c. apple juice
  • 1 c. soymilk or rice milk

Combine the dry ingredients in a large mixing bowl.  Quickly whisk in the apple juice and the soymilk or rice milk.  Do not overmix.

Drop batter by large spoonfuls onto a hot nonstick griddle or frying pan.  When bubbles appear in the batter, turn pancakes over and cook until golden on both sides.  Serve topped with maple syrup, jam, applesauce, or fresh fruit.
