4 oz dried fruit bits (raisins, apricots, cranberries, etc.)
2 t. curry powder
Salt to taste
2 scallions, chopped
In a medium saucepan, bring 3 c. water to a boil. Add couscous,
fruit, curry powder, and salt. Stir gently to combine.
Cover and let stand for 15 minutes, then add chopped scallions and
fluff with fork.
