- 2 onions, diced
- 4 garlic cloves, minced
- 2 hot green chiles, one seeded, one intact, chopped
- 1 t. cumin seed
- 1 t. turmeric
- 1 t. curry powder
- 2 15 oz cans diced tomatoes
- 4 T white or cider vinegar
- ¼ c. chopped cilantro
- ½ c. water
- 1 pound frozen sliced okra
- 2 t. ground black pepper
- Salt to taste
Sauté
onions, garlic, chiles and cumin seed in a little water until onion
begins to color. Add turmeric and curry powder and fry for another
minute. Add tomatoes, vinegar, cilantro, water, okra, and black
pepper. Lower heat and simmer for about 25 minutes, until okra is
tender and flavors blend.
