Kathy Cooks - Vegetarian, Low Cholesterol (by
Kathy Hoshijo, Fireside, Simon & Schuster, 1989). Easy to
moderately difficult recipes, almost completely vegan. Delicious,
offbeat, creative and health-conscious recipes, with clear instructions.
Much good information on nutrition and cooking techniques, and
using ingredients unfamiliar to the new vegetarian. Highly recommended
as both a source of recipes and an education in vegetarianism.
Madhur Jaffrey's World of the Past Vegelarian Cuisine
