Veggie Burger Recipe?

Q: Are veggie burgers hard to make ? My youngest daughter is home from college for the summer and I can't keep her in expensive veggie burgers.  Can you recommend a few good recipes?   I do all the cooking and could use a little help on this one.

A: I find that veggie burgers can be inexpensive to buy if you look for the brand that happens to be on sale. For example, Boca Burgers are on sale here for 2.49 and there are at least 4 to a box. (the store advertisement says 6 but I believe it's 4)...Anyway, that would be just 62¢ each for 4. Nonetheless, veggie burgers are not very hard to make. Here is one of my favorite recipes from the Peaceful Palate by Jennifer Raymond:

Tofu Burgers
These burgers are quick and easy to make. The ingredients can be mixed in advance and stored in the refrigerator for up to a week. Form and cook the patties as needed. Or you can cook all the patties at one time, then store them in the frig. and reheat them in a toaster oven or microwave. If you want to grill the burgers, precook the patties before putting them on the grill.

1 pound firm tofu, mashed
1/2 cup quick-cooking rolled oats
1 slice whole wheat bread, finely crumbled
1 small onion, finely chopped or 2 tablespoons onion powder
1 1/2 tablespoons finely chopped parsley
3 tablespoons soy sauce
1 teaspoon garlic powder or granules
1/2 teaspoon each: basil, oregano, cumin

Mix the tofu with the rolled oats, bread crumbs, chopped onion, parsley, soy sauce, and seasonings. Knead for a minute or so, until the mixture holds together. Shape into 8 patties. Lightly spray a large skillet (preferably non-stick) with oil then add the patties and brown on both sides.

If you want to be a little daring, experiment by adding finely shredded carrots, zucchini, beets, or chopped walnuts or sunflower seeds.
