<p style="color: #444444; font-family: Georgia, 'Bitstream Charter', serif; line-height: 1.5; font-size: 16px; margin-bottom: 24px; text-align: left;">Once again, let me say it up front---when it comes to our food system, Mark Bittman is the most knowledgeable journalist on the planet. He totally "gets it" about the health, environmental and sustainability issues. But like all other journalists, he doesn't take a stand; he provides no leadership, he is not a role model himself and he is inconsistent.</p>
<p style="color: #444444; font-family: Georgia, 'Bitstream Charter', serif; line-height: 1.5; font-size: 16px; margin-bottom: 24px; text-align: left;">In his New Years Day article,&nbsp;<em style="color: inherit; line-height: 1.5; border: none;">Fixing Our Food Problem</em>&nbsp;(see link below), he does a magnificent job of describing the problem but comes up way short when describing a viable solution. Here's what he had to say about the problem:</p>

Heart disease, cancer, stroke and diabetes kill more than a million people a year &mdash; nearly half of all deaths &mdash; and diet is a root cause of many of those diseases.</p>
<p style="line-height: 1.5; margin-bottom: 24px; text-align: left;">And the root of that dangerous diet is our system of hyper-industrial agriculture, the kind that uses 10 times as much energy as it produces.</p>

It&rsquo;s been&nbsp;a major contributor&nbsp;to climate change, spawned the obesity crisis, poisoned countless volumes of land and water, wasted energy, tortured billions of animals&hellip; I could go on. The point is that &ldquo;sustainability&rdquo; is not only possible but essential:<span style="color: #ff6600; line-height: 1.5;">&nbsp;only by saving the earth can we save ourselves, and vice versa.</span></p>

<p><span style="font-size: small;">I got really excited when <a href="http://www.friendlypak.co.nz/">FriendlyPak</a> first gave away a roll of <a href="http://www.friendlypak.co.nz/Products/Food-Prep/Cling-Film">BioBag</a> - a biodegradable "plastic" wrap. I didn't win, but I still wanted it. </span></p>
<p><span style="font-size: small;">We were almost at the end of our roll of supermarket plastic wrap. <a href="http://www.goinggreen-forlife.com/plastic-pollution.html">Plastic pollution</a> is a serious problem, and this flexible, nonrecyclable stuff <a href="http://plasticbags.planetark.org/about/wildlife.cfm">kills animals every day</a> and isn't great for <a href="http://www.teenink.com/nonfiction/academic/article/297345/Plastic-Pollution-and-Wastefulness/">human health</a> either. I'm thrilled to see an earth-friendly choice.</span></p>
<p><span style="font-size: small;">As  a new product, it seemed to take forever to find out how I could buy  it. The product was announced in April, but didn't seem to be orderable  from the advertised outlet. So when I saw one big catering roll in <a href="http://www.wisecicada.co.nz/">Wise Cicada</a>, I impulse-bought it for $50.  (It is now available through <a href="http://www.ecostoredirect.co.nz/kitchen/ecostore-exclusive-biodegradable-cling-film.html">ecostore</a>.)</span></p>

<p><span style="font-size: small;">We  didn't use plastic wrap for much anyway - sealing the ends of  cucumbers, mostly. We use wax paper for the kids' lunches. With a  catering-size roll, I'm using it for everything!</span></p>

<p><span style="font-size: medium;"><strong>The Good</strong></span></p>
<p><span style="font-size: small;">The wrap performs well as a wrap, sticking to the end of the cucumber and protecting it.</span></p>
<p><span style="font-size: small;">It worked well on the kids' sandwiches too at yesterday's picnic - held two together very nicely.</span></p>
<p><span style="font-size: small;">I wrapped the end of a frozen <a href="http://www.angelfood.co.nz/webapps/category/91387/238899/57629">Cheezly</a> (vegan cheese) in it. (It's still fine, but I think I should have  wrapped the whole Cheezly because it didn't stick on when left in a  freezer drawer jumble. My bad.)</span></p>
<p><span style="font-size: small;">And I can see when I empty the compost that the wrap shows signs of breaking down as promised.</span></p>
<p><span style="font-size: medium;"><strong>Cautions</strong></span></p>
<p><span style="font-size: small;">The  biodegradable wrap is more fragile than regular plastic wrap, which is  not too surprising for an organic product that is going to break down  soon. I can't use the tug and unroll method with the large heavy  catering roll - the wrap stretches so much from the weight. So I use  scissors to cut off the pieces I need. It doesn't have a tear strip on  the box anyway, but that's fine because a plastic or metal tear strip is  just more to go on a landfill.</span></p>
<p><span style="font-size: small;">After a few days of  protecting a cucumber end in the crisper, the wrap is already showing a  hint of its biodegradability compared to the plastic wrap, which I could  often reuse. This is only a small problem because we usually have to  slice off the end of the cut cucumber anyway, and I can toss the used  wrap with the old slice (and a clear conscience) and get a new piece.</span></p>
<p><span style="font-size: small;">Also  unfortunately, our roll has been gouged by something about 5cm in from  the edge.&nbsp; This hasn't impacted us much as we haven't needed large  pieces yet, but I wish I'd saved my receipt!</span></p>
<p><span style="font-size: medium;"><strong>Recommendation</strong></span></p>
<p><span style="font-size: small;">Absolutely!  It works, and it's biodegradable. While I have to treat this wrap a bit  differently to ordinary plastic, it is worth it. And when more people  buy these choices, the price will come down, so...</span></p>

    <title>Neer cast a clout &apos;til May be out - Veg*ism, Wildlife and the Environment</title>

        <![CDATA[<p>The title is an old English proverb, subject to endless debates about what any of it means (try googling it). I wrote some of this at the end of May 2010 &ndash; and as the May blossom and the month of May were both now out it seemed to be time to start some clout casting....</p>
<p>May blossom is the mass of tiny flowers which cover the Hawthorn trees. In this part of England it appears in late May and stays into early June - and we have a lot of Hawthorn around here, looking like spring snow on the trees. I notice it more when I'm photographing wildlife - and I'm increasingly wondering how long before another developer destroys a lot of it.</p>
<p>We should all know, by now, that the livestock industry is making a huge impact on climate change. But being vegetarian, and more so vegan, can also make a significant difference to the environment in other ways, including the survival of wildlife - wild plants as well as animals, birds and insects.</p>
<p><img style="FLOAT: right; MARGIN-LEFT: 5px; MARGIN-RIGHT: 5px" title="flowers" src="http://www.oswild.org/hobnob/photos/local/flowers.jpg" alt="flowers" width="100" height="451" />The damage done by grazing livestock is enormous, mainly through the destruction of habitats and extermination of competitor species. No doubt meat-eaters will point out that growing large areas of crops also destroys habits and 'pest' species - but they conveniently overlook the fact that it takes vastly more land, and water, to produce a pound of meat, compared with a pound of soy. 90% of the world's soy production is used for animal feed, if it were eaten directly by humans there would be more than enough to feed the world, and far more habitat left for the wildlife.</p>
<p>My personal involvement with wildlife began by chance. The English city my parents were living in was badly damaged during WWII. New houses were being built out of town, so they moved out and I spent my childhood surrounded by countryside. Gradually ever more houses were built and the countryside disappeared, but I was one of the lucky ones who lived there before it was destroyed.</p>
<p>I took all the photos on this page since we first moved to this part of the countryside in 2001. <em>[right: sometimes the names are as interesting as the plants - top is 'Devilsbit Scabious', and below 'Common Toadflax' both on local nature reserves]</em></p>
<p>My parents moved into the countryside when I was 3 months old, and my earliest memories are a large area of open land near our house, just a left-over patch from where the new houses had been built. It had a meandering stream, trees to climb, a swamp with frogspawn and dragonflies - and lots of birds, insects, fish and wild flowers. Several other young families made the same move away from the bombed city (this was late 1940s) so there were plenty of other kids my own age to share this natural adventure playground. The stream had a lot of bends, with fast/slow and deep/shallow areas, perfect for what was later called bio-diversity.</p>
<p>I must have been about 8 or 9 when someone in authority decided this was a health and safety issue. They sent some workmen along to build a wooden fence between our houses and our 'wilderness' - it didn't take us long to knock it down again as soon as they were gone! My first encounter with 'them'.</p>
<p><img style="margin: 10px 5px; float: right;" title="bee" src="http://www.oswild.org/hobnob/photos/local/bee3400.jpg" alt="bee" width="295" height="229" />They tried to fence it again from time to time, but we always got through - it would have been fair enough if they were trying to protect the wildife, but 'they' didn't think like that in the 1950s, it was just seen as a dangerous wasteland. Meanwhile I read every book I could find about the wildlife, and in our gang soon became 'the one who knows what things are called'.</p>
<p>Paul McCartney tells a similar story in his autobiography <em>'Many Years from Now'</em>. He is just a few years older than me and from a different bombed city, but that early experience seems to have had a similar impact on both of us, ultimately leading to the end of eating our fellow-animals. No doubt many more of our generation went through a similar encounter with the natural world.</p>
<p><em><img style="margin: 10px 5px; float: right;" title="dragonfly" src="http://www.oswild.org/hobnob/photos/local/dragonfly4400.jpg" alt="dragonfly" width="295" height="317" /></em>When I was 13, in the early 1960s, I got my first guitar and was distracted for some years from the wildlife - which turned out to be just as well. The authorities gave up with the fences and turned to their 'final solution'. They sent in a digger to cut a dead straight trench and fill in the meandering stream. Then they bulldozed the small hills into perfectly flat parkland, with closely mown grass. The wildlife vanished, and years before 'environmentalism' became trendy I began to understand what ecological vandalism looked like.</p>

<p>While all that was happening our patch of countryside was rapidly turning into a giant housing estate with ever more motor vehicles polluting the air. By the mid 1970s I was living back in the city, but it had sprawled so much that there wasn't really much difference by then.</p>
<p><img style="margin: 10px 5px; float: right;" title="peacock" src="http://www.oswild.org/hobnob/photos/local/peacock-butterfly3400.jpg" alt="peacock" width="295" height="152" />I eventually returned to the city but never lost the fascination with the countryside. Some years ago I was doing some voluntary work on a local wildlife reserve when I mentioned to a colleague that it was just like where I had grown up. That was when it dawned on me that the nature reserves were the only places in the south of England left like that. It was time to move.</p>
<p>My wife, Hazel, had a more authentic country childhood, in a small village where her family had lived for generations. But that too had been swallowed up by the urban sprawl. We looked further north and found a <em><img style="margin: 5px; float: right;" title="starlings" src="http://www.oswild.org/hobnob/photos/local/starlings11400.jpg" alt="starlings" width="295" height="143" /></em>relatively unspoilt area close to the border with Wales, and moved to a small village there in April 2001.</p>

<p>The pressure from developers is relentless, it is much easier to make a profit from building on green fields than from cleaning up polluted ex-industrial sites. The owner of the fields all around us have tried to cash in by getting planning permission to build on them, which would hugely increase their land value. We're fairly sure they won't get it at this time, and it will be safe for at least another 15 years, but the endless destruction seems almost inevitable.</p>
<p>Maybe we're just being selfish, trying to hang on to our little patch of countryside when people need houses. But the wildlife needs to survive somewhere too, and the space is shrinking all the time.</p>

<p>Time seems to pass more slowly in the countryside during the summer. The rush of spring flowers has gone, and the birds can find plenty of food under cover in the hedgerows. We actually see a lot more birds in the winter as they come nearer the houses looking for food, and there are not many leaves to hide under.</p>
<p>This was the view from my study window, over the top of the computer, early in June:</p>
<p>Not much dynamic activity, though I've seen some Hollywood films that <em>felt</em> like they were slower. The wheat in the field was looking like long grass, but a month later, early July, it was beginning to look like the real thing:</p>

<p><img style="MARGIN: 5px; FLOAT: right" title="buzzard" src="http://www.ivu.org/blog/summer3.jpg" alt="buzzard" width="258" height="461" />But we have had some activity, a lot more Buzzards than usual, circling overhead in June - looking for any young rabbits foolish enough to wander too far from the burrow.</p>
<p>The Buzzard on the right very obligingly posed on the tree right outside. They're just medium sized as hawks go, but you wouldn't want to be on the receiving end of that beak.</p>
<p>The bright orange wild flowers below have several country names, including 'Orange Hawkweed', as the hawks are supposed to eat them to improve their eyesight, though we've never seen the Buzzards eating ours...</p>

<p>Some birds are definitely smarter than others. We have a Song Thrush that regularly uses the same stone to hammer snail-shells to break them open - I'm still trying to be quick enough to get a photo, maybe next time. But one that I haven't heard of elsewhere is the Crows dunking their bread in the bird-bath.</p>
<p>They find the bread in the neighbors' gardens (we don't eat white bread!) - but it tends to dry out, so they bring it over to ours to soak it for a while, then take it back to the nest for the chicks.</p>
<p>I can't imagine that white bread is any healthier for baby crows than it is for us, but they seem to like it.</p>

<p><span style="font-size: small;"><span style="font-family: verdana,geneva;">Using veganic methods, Davie Maxwell grows the world&rsquo;s healthiest, tastiest leafy greens on his 5-acre Hidden Oasis farm near Vancouver, Washington, a short drive from Portland. I was deeply impressed with his quiet dedication, compassion for the critters that nibble his crops, and eagerness to share his learnings when I visited him on a recent trip.</span></span></p>
<p><span style="font-size: small;"><span style="font-family: verdana,geneva;">Seventeen years ago, Davie smoked, ate greasy meat and processed foods, and drank soda. Then he had a relatively minor medical problem that kept him in the hospital, just for one night. That was enough for him. <p><span style="font-size: medium;">You may wonder why a food writer like me, who advocates very moderate use of fat in the diet, would take the time to develop a full-fat homemade vegan buttery spread.<br />&nbsp; &nbsp; &nbsp; &nbsp;&nbsp;<br /></span><span style="font-size: medium;">About 2 1/2 years ago (was it really that long ago?) a woman whom I have admired from afar for years wrote to me. Her name is Kay Bushnell and I have read her vegan cooking column,&nbsp;</span><em>Cooking Green,</em><span style="font-size: medium;">&nbsp;in the&nbsp;</span><a style="font-size: medium; " href="http://lomaprieta.sierraclub.org/loma-prietan/story/cooking-green/sensational-plant-based-recipes-sierra-club-food-sites/3107">Loma Prietan Sierra Club Newsletter</a><span style="font-size: medium;">&nbsp;for years. Kay asked me if there was an alternative to vegan margarines utilizing palm oil and outlined the reasons why she was asking. &nbsp; &nbsp; &nbsp; &nbsp; &nbsp;&nbsp;</span></p>
<p><span style="font-size: medium;">I&rsquo;m ashamed to admit that it took me so long to act on what Kay was telling me. However, I never forgot about what Kay told me, or her request. When 2012 arrived, with my new book finally launched, I decided that this would be my first project for the New Year, and I wrote to Kay to let her know that I was committing to developing an alternative product. She signed on as a tester, and I later recruited a few more.&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;</span></p>
<p><span style="font-size: medium;">I have been working on this recipe since the beginning of January 2012. I wanted it to look and taste and behave much like dairy butter. I wanted to be able to use it in baking. I wanted it to be easy and quick to make, with minimal equipment required. I wanted it to cost no more than the most popular vegan margarine. I wanted options to make it with organic and even fair trade ingredients. And I wanted&mdash;no,&nbsp;<em>required</em>-- it to have a healthy balance of saturated, monounsaturated and polyunsaturated fats, with the monounsaturated fat playing the starring role&mdash;<strong><em>and that meant that my recipe would NOT be coconut oil-based.</em></strong></span></p>
<p><span style="font-size: medium;"><strong>I&rsquo;m happy to say that I have succeeded on all counts!</strong>&nbsp;Organic fair trade cocoa butter mixed with oil high in monounsaturated fat proved to be the answer, along with a few other simple ingredients<em>. (You can read about the qualities of cocoa butter in the material below.)</em>&nbsp;I tested it in vegan icing, pie crust, cake, scones and biscuits, with no problems at all.</span></p>
<p><span style="font-size: medium;">Buttah is really delicious and, besides proving itself in the baking department, it has passed the taste-test with two picky 12-year-old granddaughters (not vegan), a table-full of omni dinner guests who nearly finished off a whole batch, and a mixed bag of tasters at a cocktail party. So, I&rsquo;m proud to put my name on a homemade product which, as Erik Marcus of&nbsp;<a href="http://vegan.com/">vegan.com</a>&nbsp;says, is&nbsp;<em>&ldquo;&hellip; a butter recipe capable of destroying your cravings for dairy products.&rdquo; &nbsp;</em></span></p>

Then, while waiting for my flight back to Boston, I decided that it was time to write another blog post about Ted---and what better time than while spending a few hours in the place where I met him in person---the old Atlanta airport back in 1978.</p>

I was impressed that a man of his fame would be so warm and engaging to a total stranger. But this was no ordinary man. To refresh your memory, here's what the polio poster had to say about him:</p>

<p><span style="font-size: small;">2012 is the <a href="http://www.un.org/en/events/sustainableenergyforall/">International Year of Sustainable Energy for All</a>.&nbsp; <a href="http://www.amazon.com/Mad-Like-Tesla-Inventors-Relentless/dp/1770410082">Mad Like Tesla</a>, by Tyler Hamilton, salutes people dedicated to finding cleaner alternative energy sources.<br /><br /><a href="http://www.teslasociety.com/biography.htm">Nikola Tesla</a></span><span style="font-size: small;"> was an extremely quirky inventor full of mad ideas about the world - many of which eventually proved to work.&nbsp; Tesla didn't stop what he was doing if others ridiculed him.&nbsp; He invented the AC induction motor, radio, remote-control (teleautomation) and more.&nbsp; In 1931, at age 75, he published a design for a geothermal power plant and a way to generate power from the ocean's temperature differential.<br /><br />These new energy source developers follow in Tesla's footsteps. Most of them have left successful mainstream positions to pursue clean energy using ideas generally considered impractical in our time.<br /><br />You don't have to be a geek to enjoy this book, but it helps.&nbsp; The language is accessible, but even technology-lite can get a bit heavy.&nbsp; But I felt genuinely educated by the end of it.<br /><br />Mad Like Tesla presents mini-documentaries on real projects in:<br /><br /><strong><span style="font-size: medium;">Nuclear fusion <img style="float: right; margin: 0 0 20px 20px;" src="http://www.vegsource.com/2012/03/19/MadLT%20nuclear-fusion-prototype.jpg" alt="MadLT nuclear-fusion-prototype.jpg" width="300" height="169" /></span></strong><br /><br />The dream big brother to dirty and dangerous <a href="physics.phy-astr.gsu.edu/hbase/nucene/fission.html">nuclear fission</a> power - the sun does it, so why can't we?&nbsp; <a href="http://hyperphysics.phy-astr.gsu.edu/hbase/nucene/fusion.html">Fusion </a>has a bad reputation from past false hopes - including the truly ideal <a href="http://en.wikipedia.org/wiki/Cold_fusion">cold fusion</a> concept.<br /><br />There are two main approaches to fusion, magnetic fusion and inertial fusion, and the US government oversees projects using each kind.&nbsp; But <a href="http://www.generalfusion.com/management_team.html">Dr Michel Laberge</a> believes his smaller and much nimbler <a href="http://www.generalfusion.com/company">General Fusion</a> has a real chance (well, 50% and rising).&nbsp; General Fusion has mixed the best of both worlds into magnetized target fusion - which notably removes the most expensive parts from the design.<br /><br /><span style="font-size: medium;"><strong>Solar power from space <img style="float: right; margin: 0 0 20px 20px;" src="http://www.vegsource.com/2012/03/19/MadLT%20solarspacerace.jpg" alt="MadLT solarspacerace.jpg" width="300" height="221" /></strong></span><br /></span></p>

<p><span style="font-size: small;">Last year I was lucky enough to win a beautiful set of eco-friendly <a href="http://amyjane.hubpages.com/hub/Bowl-Set">bamboo </a>party ware from <a href="http://www.friendlypak.co.nz/">Friendlypak</a> in New Zealand.&nbsp; This substantial set arrived packed in their own compostable product - <a href="http://friendlypak.co.nz/shop/viewcategory.aspx?id=10">popstarch</a>.&nbsp; By the faint fragrance, this is made of potato starch like their compostable trays and bowls.&nbsp; I've been happily reusing this packaging in my own boxes.&nbsp;&nbsp; &nbsp;<br /><br />FriendlyPak specialises in compostable containers - stores and food providers can use these instead of plastic (which often goes unrecycled due to food contamination).&nbsp; They even have shopping and dog waste bags!&nbsp; And how cool is it that they link to <a href="http://www.storyofstuff.org/movies-all/story-of-stuff/">The Story of Stuff</a> on their <a href="http://friendlypak.co.nz/detail1.asp?page_id=331">website</a>? <br /><br />Basic scary facts on packaging waste: <br /></span></p>

<li><span style="font-size: small;"><a href="http://epp.eurostat.ec.europa.eu/statistics_explained/index.php/Packaging_waste_statistics">European Packaging Waste</a>&nbsp; "On average every citizen in the 27 Member States EU-27 generated 164 kg of packaging waste in 2008."</span></li>
<li><span style="font-size: small;"><a href="http://www.zerowaste.co.nz/hot-issues/packaging/">NZ Packaging Waste</a>&nbsp; "Each New Zealander throws away 83 kilograms of used packaging every year."</span></li>
</ul>
<p><span style="font-size: small;">If we continue to ignore packaging waste, we're going to be up to our necks in it.</span></p>
<p><span style="font-size: small;"><br /></span><span style="font-size: medium;"><strong>Packaging choices under pressure<br /></strong></span></p>
<p><span style="font-size: small;">I don't run a store.&nbsp; But I could use reusable packaging like the <a href="http://www.4myearth.co.nz/products.php">lunch wraps</a> from <a href="http://www.4myearth.co.nz/">4MyEarth</a>.&nbsp;  I have already chosen waxed paper (which can even be reused for a few  days) over plastic wrap for the kids' sandwiches.&nbsp;&nbsp; I need to do some  more research on reusable vs compostable.&nbsp; </span></p>
<p><span style="font-size: small;">One <a href="http://www.packaging.org.nz/packaging_info/documents/1104DPCsurveyreport.pdf">New Zealand survey</a> shows that consumers are concerned about too much packaging but feel ill-informed to act on that concern. <br /><br />Another <a href="http://www.envirolink.govt.nz/PageFiles/315/682-nlcc37.pdf">study</a> takes a hard look at the eco-friendly claims for various types of packaging - there's lots to learn here even for those of us who might think we're already savvy.<br /><br /></span><span style="font-size: medium;"><strong>Counting the cost</strong></span></p>
<p><span style="font-size: medium;"><strong>&nbsp;</strong></span><span style="font-size: small;">This <a href="http://www.theecologist.org/News/news_analysis/277705/reusable_packaging_in_the_uk_cost_the_major_factor.html">packaging discussion</a> finds that cost is still the biggest factor when people choose disposable packaging over more eco-friendly choices.&nbsp; They also point out that as waste pressures rise, the real cost of waste disposal will motivate more consumers to choose better packaging.&nbsp; <br /></span></p>
<p><span style="font-size: small;">In Auckland, the Waste Management and Minimisation Plan includes charging us each time our bin is emptied instead of (as present) a flat cost each year. As a pretty good <a href="http://minimalistmum.blogspot.co.nz/2011/05/reduce-your-rubbish-and-take-out-trash.html">waste minimiser</a> already, I'm a fan!<br /><br />And, of course, the more we support these eco-friendly industries, the cheaper their products will be.&nbsp; <br /></span></p>

I was out there stumbling around, hungry for delicious recipes to delight my newly vegan taste buds, and there were very few inspiring options. Now there's a seemingly unending stream of fabulous vegan books to choose from. It seems as though every time I am just getting into a fantabulous new book, there's another one right around the corner! I'm making it my mission to own, review, and share them all. The recipes are superb, and Susan Voisin's photographs are gorgeous. And best of all, the heavy, hardbound edition means the book lays flat when open to&nbsp;<em>any</em>&nbsp;page! I can't tell you how wonderful it is to not have to prop a jar or small plate on a page and get it all dirty with sticky fingers, just not to lose my place in the middle of trying to follow a recipe. Well, I don't have to tell&nbsp;<em>you,</em>&nbsp;my lovely readers. You know&nbsp;<em>exactly</em>&nbsp;what I'm talking about!</span></span><br />

Growing up in New York, one of my fondest childhood culinary memories is of the Sunday meals our family enjoyed at the once-famous Jewish-Romanian-style restaurant, Seymour Kaye's in Forest Hills, Queens. Picture crisp, white linen tablecloths and napkins, smiling servers in black vests and bowties, a gay African American piano player belting out Yiddish tunes, and a Puerto Rican chef turning out the most incredible Yiddish cuisine. That was Seymour Kaye's. Seymour's larger-than-life personality, (he'd make loud "kissy" noises when he wanted to get the attention of one of the servers!), the impromptu designer clothing store "hidden" behind a wall of curtains, the upbeat, boisterous, family-friendly atmosphere, and the incredible Yiddish cuisine made the restaurant a cultural landmark that attracted customers from Manhattan to LA. Celebrities like Walter Matthau loved the place, and&nbsp;I even tended bar there for a short time!<br /><br />A favorite appetizer at Seymour Kaye's was the chopped chicken liver. My father used to slather it in schmaltz and grebbenes&mdash;liquid chicken fat and fried chicken fat and onion cracklings. (Sounds gross, I know, and talk about a recipe for a heart attack!) But I cannot help associating many fond memories with the flavor of this dish, and Nava's cruelty-free recipe for this Yiddish&nbsp;<span style="line-height: 16px;"><em><span style="font-style: normal;">p&acirc;t&eacute;, made with cashew, onion, and mushrooms is a deliciously heart-healthy counterpart to Seymour's dish. Matzo ball soup is usually enjoyed during Passover, and vegan matzo balls are typically made with tofu. But that's a problem for many religious Jews, because beans and bean products (like tofu) are forbidden foods during the week of Passover. What a brilliant idea to substitute quinoa flakes! Let me tell you, the matzo balls tasted fabulous and held together beautifully (even after reheating), and the soup was hearty, flavorful, and filling!</span></span></div>

<p>In the middle of the Pacific Ocean where all the currents converge, a massive garbage dump has collected.&nbsp; I mean a garbage dump that&rsquo;s estimated to be the size of <em>France</em>.&nbsp; And that&rsquo;s just the surface area &ndash; no one really knows just how deep it goes, but it could be <em>miles</em> deep.&nbsp; Where is all this garbage coming from?&nbsp; It&rsquo;s mainly coming from plastic products that somehow find their way into the water.&nbsp; Plastic does not break down very easily, which is common knowledge, yet what really happens when we throw plastic products away?&nbsp; If they end up in our waterways they are likely to find themselves swept out to sea with the current, eventually stopping in the Great Pacific Garbage Patch.&nbsp; A quick Google search will instantly reveal pictures of plastic dishes, plastic Barbie dolls, and most commonly, plastic bottles, all floating around in a huge mess in the middle of the ocean, creating a massive garbage dump, the size of France, in the middle of the Pacific. &nbsp;Fish, dolphins and other sea critters can get caught in this mess and die.&nbsp; It&rsquo;s devastating, yet very few people even know about it!</p>

<p>So I find myself, a concerned citizen, in that place of not really knowing what to do about it, but being very upset about it nevertheless.&nbsp; I started noticing on a recent vacation to Bali that plastic bottles were strewn all along the side of the roads, on the beaches, and in people&rsquo;s yards.&nbsp; I went to a burrito restaurant last week and cringed as the young man donned a pair of fresh new gloves, made my burrito, then took them off and threw them away before ringing up my order.&nbsp; I wondered how many gloves fast food restaurants go through in a day doing this.&nbsp; I see people in the grocery check-out line putting <em>every</em> type of produce into those little plastic baggies &ndash; I understand putting a hundred green beans in a plastic bag (preferably a paper bag, if your grocery store offers them) but why on earth put bananas in a plastic bag?&nbsp; Why put apples or broccoli in a plastic bag?&nbsp; Just get them home in your canvas tote where you&rsquo;ll rinse them off anyway.&nbsp; Speaking of canvas totes, what about all the people still using plastic shopping bags at every trip?&nbsp; At the airport a few weeks ago, I noticed an entire 4&rsquo; garbage can overflowing by 8:00 am with large plastic bottles and spray cans that people forgot they cannot carry on to the plane &hellip; and that was just <em>one</em> security checkpoint at <em>one</em> airport.&nbsp; The amount of waste we are creating is horrific.</p>
<p>I&rsquo;m no expert on the environment, but I don&rsquo;t think we need to be experts to understand that a garbage dump the size of France in the middle of the ocean is not a good thing.&nbsp; We vegans have all heard about how our diet benefits the environment, and we can feel good about that, but what else can we do to make a difference?&nbsp; How about&hellip;</p>
<ul>
<li>Commit to using canvas totes at every grocery outing.&nbsp; If you forget, you must go back to your car and get them, rather than use the grocery store&rsquo;s plastic bags.</li>
<li>Bring your canvas grocery totes to non-grocery stores, like Target or the book store.</li>
<li>Never allow checkers to put individual items like tooth paste or washing machine soap into individual plastic bags &ldquo;for your safety.&rdquo;&nbsp; These products are already sealed like a vault, and they are not going to leak in your tote bag.</li>
<li>Commit to only using produce bags for very small items, like green beans, that need to be contained.&nbsp; Look for paper bags instead, and request your grocer carry them if they don&rsquo;t.</li>
<li>Buy a gorgeous water bottle and only allow yourself to drink from it or from a glass &ndash; no more paying for water in plastic bottles.&nbsp; This tip can also save you a lot of money.</li>
<li>Commit to drinking beverages you buy in convenience stores only from fountain-style dispensers &ndash; not from plastic bottles.&nbsp; </li>
<li>Just before you take your garbage out to the garbage can, clean out your cat&rsquo;s litter box and just throw it in with the load going out to the garage &ndash; don&rsquo;t use individual little plastic bags which then go into the garbage can anyway.</li>
<li>Instead of buying disposable plastic food storage containers (like the Ziploc or Glad brands) that you dispose of after a handful of uses, buy either non-plastic containers or more durable plastic containers (like Tupperware) that you can use years on end.</li>
</ul>
<p>These are just a few ideas that I came up with quickly.&nbsp; Yet there must be hundreds of ways we can cut back our plastic garbage.&nbsp; What ways can you think of to help reduce your corner of the garbage patch?&nbsp; I&rsquo;d love to hear your ideas!</p>

I was completely floored by the stunning collection of intensely flavorful recipes and gorgeous photographs nestled within its pages. (Kudos to photographer Bill Bettencourt. The photo of Balsamic Brussels Sprouts is downright sexy!) While I couldn't wait to dive in to each and every recipe in this book, quite possibly the most exciting find for me was the recipe for Tea-Scented Tofu, which I made with&nbsp;<a style="color: #f12100; text-decoration: none;" href="http://www.mountainroseherbs.com/search/search.php?refine=y&amp;keywords=lapsang+souchong&amp;x=0&amp;y=0">Mountain Rose Herbs Lapsang Souchong tea</a>. This tea's strong, smoky fragrance is reminiscent of a campfire, and it enveloped our home throughout the night.&nbsp;I never imagined that I'd ever be making my own smoked tofu, but the results were so much more delicate and delicious than anything store bought, I don't think I can go back to eating packaged smoked tofu again.</span></span></span></div>
